People upgrade their coffee machine to close a gap that the machine was not causing. Before spending anything, it is worth working through the three variables that account for most of the difference between a café cup and a home one, because two of them cost nothing.
The first is bean freshness, and it is the largest by a distance. Coffee degasses after roasting and the flavour compounds oxidise. A bag roasted three weeks ago tastes noticeably flatter than one roasted five days ago, and supermarket bags routinely carry a best-before date rather than a roast date — which tells you that the roast date is not flattering. Buying from a roaster who prints the roast date, and buying smaller bags more often, changes more about your cup than any machine in the same price bracket.
The second is grind, specifically grinding immediately before brewing. Ground coffee loses its aromatics within about fifteen minutes of grinding, which is why pre-ground coffee has a ceiling no machine can lift. If your machine has a built-in grinder this is already handled. If it does not, a hand grinder costs less than a single service visit and does more for the cup.
The third is water, and it is the one nobody thinks about. Coffee is roughly ninety-eight per cent water, and hardness changes extraction directly — very hard water under-extracts and tastes flat and chalky, very soft water over-extracts and tastes sour. Most Dutch and Belgian tap water is on the hard side. A simple filter jug is enough to test whether this is your problem: brew the same beans with tap and with filtered water on the same day and taste them side by side. If the difference is obvious, you have found your upgrade, and it is not a machine.
What the machine actually controls is temperature stability and pressure consistency, and those matter — but they matter at the margins, after the three above are handled. A very good machine fed stale supermarket beans ground yesterday in hard water will make a worse cup than a modest machine fed fresh beans, ground now, in filtered water.
The practical order: fix the water, fix the freshness, fix the grind, and only then look at machines. If you do it in that order you may not need the machine at all, and if you do buy one you will actually hear the difference it makes.
