What actually matters in a bean-to-cup machine

Four specifications decide whether a machine stays on the counter. None of them is the one on the front of the box.

The front of the box carries a pressure figure, a bean-hopper capacity and a drinks count. None of the three decides whether the machine is still on the counter in a year. Four other things do, and all four can be checked before you buy.

Cleaning time, which nobody prints

This is the specification that decides everything else, and no manufacturer states it as a number. A milk system with tubes takes about four minutes a day: detach, rinse, reassemble, and run the cleaning cycle when the machine asks. A two-part carafe or a jug you drop in the dishwasher takes about forty seconds. Over a year that is the difference between a machine you use and a machine you move to a cupboard.

You can work it out from the manual before you buy. Download it, find the daily-care section, and count the parts that come off and the steps that follow. If the list runs past four steps, assume it will be done properly for a fortnight and then not at all.

Temperature stability, not pressure

Shot temperature stability matters more than pressure. Fifteen bar is marketing — every machine in this class has it, because a pump that can reach fifteen bar costs almost nothing. Holding 92–94 °C at the cup across twenty consecutive shots is not, and it is where cheap machines fall apart: the first cup is right and the fourth is thin, because the boiler cannot keep up.

The published spec that comes closest is the boiler type. A thermoblock heats fast and drifts under load; a brass boiler heats slowly and holds. If a machine publishes neither, that silence is itself an answer.

Grinder steps, once

Grinder adjustability is worth paying for once, and then never again. Twelve steps is plenty: it covers the range between a bean that is two weeks old and one that is two months old, which is the only adjustment most households ever make. Beyond that you are buying a hobby, which is a fine thing to buy — just know that is what you are doing, and that the extra steps are the part of the price you will not use.

The row to look for is burr material rather than step count. Steel and ceramic both work; what matters is that the burrs are listed as replaceable, because a grinder is the part that wears.

Service parts in year five

A machine whose descaling kit and brew group are still stocked in year five costs far less to own than one that is replaced in year three. Manufacturers publish this, and almost nobody reads it: the spare-parts page on the manufacturer’s own site tells you which models are still supported, and it is the cheapest ten minutes of research in this category.

Two things to check there. Whether the brew group is removable at all, because a sealed one turns a routine service into a repair; and whether the water filter is a proprietary cartridge or a standard one, because that is a cost that repeats every two months for as long as you own it.

Put together, the four give you a shortlist without a single test result: a short daily-care list, a boiler the manufacturer is willing to name, replaceable burrs, and a spare-parts page that still lists the model. What is left after that is taste, and no specification is going to settle that for you.
